Spend any amount of time in North Carolina and you’ll probably find yourself with a mouthful of fried chicken. It’s everywhere, made in every possible way, and it’s all delicious. But we’ve never tasted anything so quintessentially southern as this pickle-brined, hot-dipped fried chicken. The pickle brine somehow gets all the way to the bone without being overpowering. The hot dip you’ll pour over it brings the vinegar-based heat. Don’t be scared off by what looks like a complicated recipe. It’s really not. Do it once and we promise that when you make it again (and again, and again) it’ll be like second nature.
