Mema’s Gingerbread

Not too sweet, not too spicy, way too delicous. You will absolutely love this old southern holiday recipe that I’ve been making since I was big enough to hold a wooden spoon in my mema’s kitchen. Dust it with a little powdered sugar if you want to be fancy. It’s the kind of desert that says “Yes, I’m a great baker and I don’t have to look like I try.”

The cake is light and airy, and not too bold. But trust me, it’s as impressive looking as all get out. I love that the batter takes to any tin, so it’s a chance to use your decorative one. Wrap it in some cellophane, tie a ribbon up top, and it’s the perfect gift to accompany you to a holiday party. You can bet you’ll be invited again.
