Buttermilk = Magic. Southerners have verified, demonstrated, proven, and codified this with their world-renown Buttermilk Biscuits. So when we caught wind of this old-school brine, we were surprisingly surprised and somewhat skeptical. C’mon. How much difference can a buttermilk brine (which we’d never heard of before) actually make?

Turns out, all. All the difference.

It’s so simple – bird, buttermilk, salt. Yet it makes ordinary chicken more tender and flavorful than you’d think. Pile some new potatoes and okra around it while it cooks for an easy side.
